BBQ PORK SWEET POTATO

Ingredients: 

  • 5 oz Pork Tenderloin 
  • 2 TBS of Sugar Free BBQ Sauce 
  • 1 Medium Sweet Potato 
  • Green Veggie of Choice (optional and not included in the macro amount) 

 

Instructions: 

  1. Cook pork tenderloin in crock pot on low for 8 hours (Cook time may vary with amount of meat) 
  1. Bake sweet potato on 375 until tender. You will be able to easily puncture with a fork 
  1. Once pork is finished cooking use two forks to shred 
  1. In a bowl, place a serving of pork and SF BBQ sauce and mix together. Then place on top of the bake sweet potato and serve with a side of green veggies of choice 
  1. ENJOY
